Eggplant with Garlic & Lemon Salad:

Ingredients:
1 medium-small Eggplant
2-4 teeth of garlic.
2-4 Red Chili.
1 medium size lemon (depend on your personal taste).
1/4 tea spoon of salt.

Instructions:

Prepare the eggplant:

Take a steel net and place it on the gas stove.
Open the gas and light up fire and grill the eggplant (complete,don't cut it yet!).
Grill it on all sides until the cover start(!) to get burn, just to get the flavor and cook the eggplant properly.

In the meantime, the eggplant already got cool enough that you can take off all the inside and separate it from its black cover.

Cut the clean eggplant into small pieces.
Mush the eggplant to complete process.
Clear the water come from the eggplant with net.

Prepare the mix for the salad:

Mush the garlic and chili together in traditional Thai "som tam" kitchen hardware.

Take a medium size box/dish and pour all the mix together with the eggplant.
Add lemon and mix.

Good with toast bread and as appetizer.
*Can add 2 spoon of Moines to the recipe as well.(Without lemon)

How to make Shawarma at home?

Shawarma is like the ultimate on the go meal.
Thinly sliced meat, wrapped in a pita bread with veggies and sauce is a delicious quick meal.

But what you don't know is that anyone can do it at home easily! Even in Buriram!!
;)

Ingredients:

1 box (around 300-400 Gram) of boneless, skinless chicken thighs or breasts (thinly cut).
1 box (around 300-400 Gram) of chicken hearts.
1 flat big spoon of shawarma ready spice mix.
1/2 tea spoon of salt.
1 small-medium onion (I recommend on red onion).
1 flat big spoon cooking oil.

Tip: Can also add chicken liver pieces into the mix.

Instructions:

Wash all the meat with clean water.

Cut the chicken pieces into very thin slices.
Cut the onion to thin slices.

Mix all the meat with the onion and add 1 flat big spoon of shawarma ready spice mix.
Massage the meat together to get the spices good into the meat mix.

Take a big pan (preferably TEFLON) and add really little bit of oil (The meat have lots of juices that will go out when cook all together.

Pour all the mix into the pan and keep mix it in the pan, make sure the chicken hearts get cooked and keep stir it from time to time to close the meat.
Add 1/2 tea spoon of salt and stir.

That's it, the shawarma is ready, too bad I can't get the smell to you also.  biglaugh  sissies

You can eat it with anything as side dish, potatoes, bread or anything else!  hungry1

Simple Chili paste recipe

Here is a simple recipe for Chili Paste.  steamingMad

The chili paste should be stored in a jar in the refrigerator. Use as needed.

The Chili paste can be used as bread spread when doing sandwich and for add on when cooking to spice things up! redman

Chili Paste (Quick Recipe) (very hot paste)

Ingredients:

1 box/bag of fresh chillies.

4-5 garlic cloves, peeled and roughly chopped.

2 medium size of peeled red tomatoes.

1/4 glass of water.

1 flat teaspoon salt.

Put all into blender or food processor.

Add salt.

Put into sterilized bottle/jar and store in refrigerator.

good for up to 14 days.

Making spaghetti is so easy to do..

The ingredients are cheap as well.

Pack of small spaghetti cost around 30-70 Baht and enough for 2-4 people.

Making spaghetti:

1 medium size pot.

Pour clean water and boil it until the water have bubbles.

Carefully insert the spaghetti into the boiled water (some people like to break the spaghetti to half while doing it but I think it ruin all the fun of eating spaghetti, DONT BREAK THE SPAGHETTI!!  ;) ).


Simple tomato Spaghetti sauce:

1 small onion (white/red; It doesn't matter).

4-5 medium size of red tomatoes.

2-4 teeth of garlic.

2-5 red chillies.

1 tea spoon of salt.

1 tea spoon of white pepper
Cut the onion into small pieces, fried with little bit oil, add the tomatoes (cut them and take off the bad part in the middle) and add the chillies and garlic, keep boil it until the tomatoes get soft than mash them.
Add salt and pepper depend on personal taste and that's it.

Simple and Tasty.  sissies

With some good meat on the side and maybe green salad, you are set all day!  party8

I always like to add something to the rice to make it more interesting.  yum1

Here I show how to make simple mix of champignon mushrooms with onion cut into small pieces and fried on a pan with little bit oil.

Fry and still until ready, mix with the rice and eat!  thumbup

Very simple and upgrade any simple plain white rice. hungry1

Champignon Mushrooms bought in "Makro" Buriram.
Pack of 3 cans cost about 110~ Baht.

Not expensive but hard to find in the other supermarkets such as "Tuwikit"/"Big-C" and the other small supermarkets.

Yemenite soup

Ingredients:

Chicken legs/breasts.

2 big Onions cut into quarters.

3 medium size of tomatoes.

1.5 Liters of Drinking water.

2 tea spoons of salt.

1.5 big table spoon of Yemenite spices.
(Hawayij: a cury-like, Yemenite spice mixture.
*Contains: black peppercorns. cumin seeds, cardamom seeds, saffron, turmeric).

Cooking oil.

Put the chicken parts into a pot and cook them for few minutes with little bit oil that they will not stick to the pot.
than, add the onion,tomatoes and water and boil.
Take the white foam out. (will be out off the chicken parts as you cook them, take is slowly with a clean spoon and throw the foam).
Lower the fire and add the rest of the ingredients. Cook for 30-45 minutes until the chicken is ready.

*You can eat it with bread on the side or add rice into the dish same I did in the picture below. 
Its tasty, smells good, not too spicy and I think even healthy.

*I like to add tomatoes inside and usually also potatoes, but as you can see and understand, it can be plain vegetarian soup with any kind of vegetables as well.

Back to simple farang recipes and this time a very simple recipe all of you can do at home, for beef lovers. wildman

Beef fillet cubes with onion garlic and chili.

Ingredients (Serves 1-2 persons):

300-500 Gram of Beef fillet.
1 Onion.
2-4 red Chilies.
2-5 teeth of Garlic.
1 spoon of cooking oil.

Preparations:

Cut the beet into medium size cubes and fry them in the pan (Teflon/thick pan is best).
Add salt,black pepper or any other spices you like (I like the Cumin spices mix).

Cut the onion into thin slices and the garlic into small pieces to let the taste go into the meat and cutnotch the chilies to let some spicy flavour get into the food (I like it but you can cook it without any chili if you don't like spicy food).

Add to the pan and fry it all together until you see it gets brown and mix together for about 2-3 minutes.

Ready! character4
Eat with Jasmine rice and make some green salad for the perfect beef dish.  hungry1

PS: Add an extra shot of red wine will tremendously upgrade the dish. party9
