Hi
Christmas does not mean much to the average Thai so finding a room will be no different from any other time of year.
Plenty of rooms available in Buriram ~~~ but I have no first hand experience so cannot make recommendations.
good luck

I saw a few celebrations happening on last christmas while returning from Prasat to Prakonhchai.
But Yes, christmas does not mean peak season to places like Isaan. So there should be plenty of rooms.
