Fresh beef ( no, not a new moan )

Big C in Surin always has fresh beef. Their ground beef (Pen Fed 20% fat) makes the best burgers I have ever had in Issan. I am surprised that the Buriram store does not have it also.

There is a limit to what a store can stock, and I think you will find that Big C Buriram (like Makro) are smaller than their Surin cousins.

The flies love it too.... After seeing them chilling out on the meat at my local market i think ill give that a miss..

Exactly, if you approach the beef stall in a direct line, the ladies immediately jump up and started waving their sticks with plastic bags attached to remove the flies -- or maybe they are trying to catch them. However, if you are a bit sly and approach the stall but looking in the opposite direction, you can catch them as unawares as the flies feasting on their meat. All good fun...

You don't want fresh killed beef. It is flat tasting and tough. It should be aged a couple of weeks or so, especially if it is dry aged, before being cut. A steak from a freshly butchered side of beef will have you chewing half the night. I don't have a problem with the Big C beef I buy in Buriram. I only buy it minced and use it for my weekend morning's SOS.

Maybe my use of the term ' fresh beef ' was incorrect. What I really wanted to find was a store with a meat counter ( such as Friendship in South Pattaya ) where you have a choice of cuts. A friend of mine back in the UK is/was a master  butcher at Sainsbury's. He told me a long time ago not to choose red beef but rather go for the brown beef which as you rightly say has been aged a bit.
