I also make a white sauce, cheese sauce with cornflour. What else can you use to thicken it?

Tapioca flour can be used. Just as good and cheaper than cornflour.

Where do I bring the beer?

I use the Army grading system:

Is the beer free?

Is the beer cold?

If yes, it is a great beer.

We are perfectionists here. Great is not good enough.

If it were Leo, and were both free and ice cold it would be FANTASTIC

Cheese sauce , fresh milk full fat , a table spoon of plain flour and a knob of butter walnut size , black peeper salt ,if you like mustard a heaped tea spoon full  ,or some people like Worcestershire sauce a splash, cheese .Pore cold milk in the pan (none stick better)  add the plain flour and the butter , turn on the heat stir with wooden spoon until it goes nice a think , don't stop stirring or you will get lumps(no good)then add the cheese chop it up first so it melts easy .Easy sauce made in 10 mins max ,no need to make a rue !And for sure NO CORNFLOUR yak !!! -- I blanch the coli for two mins only mix then put in the oven for 20 mins with a sprinkle of cheese on the top..
