pickled cucumbers in salt COMPLETED !!

indigrients:

Small Cucambers.

2 red chillies.

3 teeth of garlic.

2 big spoons of salt.

1 medium size Glass jar. (Plastic jar is not recommended as the taste can be damaged).

Recipe:

-Put first the garlic teeth to the bottom of the jar.
-Put the cucambers inside the jar.
-between the cucambers put the red chilies not before you cutnotch them.
(to spice a little the pickles..).

Take 2 glasses of water (drinking water not the city hall water..  sick1 ) and mix with 2 spoons of salt untill the salt mix with the water.

*better practice is to boil the water with the salt,it will also help to shortcut the pickle proccess as well.

pour the water into the jar and close it hermetically(!).

Leave the jar in a temperature room (not inside the fridge).
Proccess will take between 4-5 days.
When the cucambers are ready keep the jar in fridge.

Was looking at the thread.  Two points:

1.  The cloudyness is probably a result of using table (iodized) salt instead of pickling or sea salt.   Saxa Sea Salt is available at Marko in the spices. 

2.  No dill in the recipe.  Dill seeds are available at Makro (unfortunately have not been about to get in Buriram or Surin), but is available in Korat and Pattaya.   

If you look at the photo, the jars on either end were canned over a month ago, no cloudiness.  And if you look you can see the dill seeds at the bottoms.

If you have a jar of dill pickles (gerkins), when you finish the pickles repack the jar (keeping the juice) with boiled eggs (deshelled).

Put in the fridge for a few days and you have pickled eggs.

You can buy  the vinegar for your pickled eggs in Tops .. Different types of vinegar for your choosing.. Didn't know Americans ate pickled Eggs.. Just shows you never stop learning..

The stuff they call pakchee lao in the local markets looks a lot like fresh dill.  Has anyone tried that?

I bought some French's Stroganoff from Big C, it came out very well.  Two other main ingredients you need are beef and sour cream (available at Macro and Big C). 

Easy to make, fry the Beef, add the Stroganoff package contents and sour cream.  The serve over noodles or rice.   hungry1

Salsa:

Two or three cups of ripe tomatoes cut into small chunks
Two teeth of garlic (finely chopped and crushed)
Three tablespoons of fine chopped onion (sweet onions work best, but any will do)
Four tablespoons of finely chopped Cilantro (AKA pa chee, or Chinese parsley)
Jalapeno peppers to taste (1/2 to 2 peppers) finely chopped (Thai chili's will also work)
Juice of 1/4 to 1/2 lime
Salt to taste

Guacamole recipe:
Make the above salsa recipe and then add two very ripe avacadoes and stir well.

Eat with corn chips (or is it crisps?)

That's a simple recipe.

The above will be considered complicated by many.
I find the idea of adding two avocados (expensive), I would have maybe chopped them first.

I have a similar recipe where you replace the beans ( not butter needed on the toast )  with Sardines in Tommy sauce straight from the Can . You can even sprinkle a little ground black pepper and vinegar to taste ....if you wish ;) 

(Cherry Tomatoes optional :)  )

Looks good Sofa King - although I would personally have given the toast a bitter longer.



I guess it does show integration into Thailand though  -  perhaps eating that with a spoon and fork would complete the integration.


What quality of 'fish can' did you use ?.............. I quite like Rosa.

Sausage patties.  It was amazing to me how easy it was.


1 kilo Ground pork
1 Tablespoon Sage
1 Teaspoon Crushed red pepper   
1 Teaspoon Black pepper


Put all in Bowl, mix together.  let set for 12 hours.  Make into patties or links.   Freeze. 


Wow, very easy. Tops has sage, rest is available all over.  If you want hotter, add more red pepper.   I did for a cheese mix.

BTW, I avoid sugar and salt in recipes.   So it  might not be to your taste.
